It's actually a truth-in-advertising thing. They can't guarantee that the pasta doesn't have gluten because it's easy to get cross-contamination in the kitchen. However, they made sure not to use any glue tins!

Maybe that also explains the four different kinds of "chesse" in the ravioli.

Wow. I was so stunned by the Glue Tins that I missed the chesse ravioli. The Urban Dictionary says that "chesse" is "the attitude one has the moment before one engages in uncontrollable behavior." I'm not sure if that means the chef was on the edge of uncontrollable behavior when making the ravioli or if it inspires uncontrollable behavior in those who eat it. Either way, I'm going to pass.

I'm kind of sensitive to the "chesse" thing because my morning bagel place has it on their menu board several times, so I see it every day. I pointed it out to them years ago, but they've never changed it.
