Your way makes sense, too. I thought Sam's fast Latin came from the demons knocking the books they were reading from away during the last couple of exorcisms. The best the demons can do to counter them reciting from memory is to try to distract them. Plus, Sam has slowly been becoming a little harder all season. Dean confronted him about it back in "Malleus Maleficarum." And really, the last time Sam was nice and gave someone the benefit of the doubt, he got his spinal cord severed for his trouble.
Ruby certainly has her own agenda and isn't working with the Winchesters out of the goodness of her heart. I hope we find out what her true motive is soon.
